Quick & Easy Week Night Dinner - Thai Lettuce Wraps
I obviously really love to cook. I have made stock from scratch, whole roasted chickens...you name it, I want to cook it. I love a quick dinner, but do not shy away from making things from scratch when I have the time. I whipped this together in 15 mintues and my husband stated, "This is the best thing you have ever made!" *Heavy Sigh* Sometimes things do not have to be complicated or forever-taking to be delicious and this is one of those recipes. My husband requests this about once every other week and it makes for the perfect week night dinner.

Quick & Easy Thai Lettuce Wraps
HERE IS WHAT YOU NEED: ground turkey, rice, cabbage, red bell pepper, head of lettuce, sesame oil, garlic, green onion, soy sauce, Sriracha, fish sauce, red curry paste, chili sauce, ginger, bean sprouts
WHY THIS WORKS DURING THE WEEK: One skillet and 20 minutes is all you need for this crowd pleaser. Even more delicious as leftovers.

Quick & Easy Week Night Dinner - Thai Lettuce Wraps
INGREDIENTS:
(Makes 4 servings)
1 lb ground turkey
1 cup uncooked rice, 1 boil in a bag, or 1 microwave instant rice
1 head of lettuce
1 head of cabbage (I do half green and half purple or you can buy precut in a bag)
1 red bell pepper sliced thin
2 tbs sesame oil
3 garlic cloves minced
2 tbs fresh ginger grated (add more if you really love ginger)
2 tbs red curry paste
1 tbs chili sauce (add more for more heat)
2 tbs Sriracha (add more for more heat)
2 tbs fish sauce
1/4 cup soy sauce
Green onions (whites to sauté and green parts for topping)
Bean sprouts for topping
Salt + pepper to taste
INSTRUCTIONS:
In a medium skillet heat sesame oil. After oil has heated, sauté white parts of the green onion and garlic until fragrant.
Add ground turkey and cook until lightly browned. Add cabbage and bell pepper, sauté until softened. Season with salt and pepper.
Add curry pasta, chili sauce, Sriracha, fish sauce and soy sauce. Stir evenly. Turn heat down to a low simmer.
Prepare rice per package. Once rice is prepared, add to skillet with meat and cabbage. Stir evenly.
Season with salt and pepper to taste.
Place meat and rice mixture into lettuce cups, top with green onion & bean sprouts.
Serve & enjoy!
